Sweet and Spicy Shrimp Tacos (20 Minutes, One Skillet)

Shrimp tacos are the best weeknight dinner nobody makes often enough. Twenty minutes, one skillet, and you end up with something that tastes like a beach bar — not like Tuesday.
The catch is that most sweet and spicy shrimp tacos recipes make you build the sauce from eight jars. Honey here, sriracha there, a squeeze of lime, a pinch of this. Then you taste it and it’s just hot, or just sweet, and you’re chasing balance while your shrimp overcook.

For the shrimp
- 1 lb large shrimp, peeled and deveined, tails off
- 3 tbsp Roaring Sauces Fruity Hot Sauce
- 1 tbsp olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp kosher salt
- Juice of half a lime
For the peach crema
- 1/3 cup sour cream (or plain Greek yogurt)
- 2 tbsp Fruity Hot Sauce
- Pinch of salt
For assembly
- 8 small corn or flour tortillas
- 2 cups shredded green cabbage or slaw mix
- 1/4 red onion, sliced paper-thin
- Handful of cilantro
- Lime wedges
- Cotija or feta, if you like it
How to make sweet and spicy shrimp tacos
- Dry the shrimp. Pat them properly dry with paper towels. Wet shrimp steam instead of searing, and steamed shrimp will not hold a glaze. This is the step people skip and then wonder why the sauce slides off.
- Season. Toss the shrimp with the olive oil, smoked paprika, garlic powder, and salt. Leave the hot sauce out for now — sugar in the sauce will scorch if it goes in the pan cold.
- Make the crema. Stir the sour cream, 2 tbsp Fruity Hot Sauce, and a pinch of salt together in a small bowl. That’s it. It should be the color of a faded peach. Refrigerate while you cook.
- Warm the tortillas. Dry skillet over medium-high, 30 seconds a side, until they puff and pick up a few brown freckles. Stack them in a clean kitchen towel to stay warm and soft.
- Sear the shrimp. Hot skillet, medium-high, single layer, no crowding. Two minutes on the first side, flip, one minute on the second. They’re done when they curl into a loose C shape. A tight O means they went too far.
- Glaze off the heat. Kill the burner, pour in the 3 tbsp of Fruity Hot Sauce and the lime juice, and toss for about 30 seconds. The residual heat thickens it into a glossy coat without burning the peach. Every shrimp should look lacquered.
- Build. Warm tortilla, a handful of cabbage, three or four shrimp, thin red onion, a drizzle of peach crema, cilantro, cheese if you’re using it. Lime wedge on the side.
Eat immediately. Shrimp tacos do not improve with waiting.
Tips that actually change the result
Buy bigger shrimp than you think you need. 21/25 count or larger. Small shrimp overcook in the time it takes to get a sear.
Frozen is fine. Most “fresh” shrimp at the counter was frozen anyway. Thaw in a colander under cold running water for five minutes, then dry them well.
Cabbage, not lettuce. You need something that stays crunchy under a warm glaze. Lettuce wilts into sadness in about a minute.
Double the crema. You will want more. Everyone always wants more.
FAQ
Can I use the air fryer or grill?
Yes. Air fryer: 400°F for 6–7 minutes, shaking halfway, then toss with the sauce in a bowl. Grill: thread onto skewers, 2 minutes a side over direct heat, brush with sauce at the very end. Same rule either way — sauce goes on last.
How spicy is this?
